Plane to Spain
As I am writing this I am on the plane to Spain! first stop London England hethrow airport. I got to the air port nervous and horrified about missing my girlfriend,my family and friends and well about flying and currently I am up in the air (first class, thanks to my wonderful friend Sasha) sipping a vodka soda and eating mixed nuts, waiting for my pan seared chicken breast for dinner! Now I truly believe that ignorance is bliss, going back to economy is going to be a hard trip from the comfort of my personal bed here in Business class!
I had enough time to watch two movies and even some cooking shows...I couldn't really sleep the turbulence was pretty rough in spots, and I am not the best flyer so my stomach was turning and my head was pounding the whole time,but it was still a comfy ride!! From Toronto air port on is going to be a day by day adventure! Nothing is really planned yet and to be totally honest I have no idea what Europe has in store for me! I am sorry I cant write more but I am laughing to hard at Sheldon Cooper and we are about to land in Hethrow Airport :) Hope everyone had an awesome new years day!

todays the day!
Good Morning Interwebs!
Today is the day and I think it hit me...! I have only been up for about an hour and I have already been hit with a gun fire of emotions...
terrified, excited, hurt, happy, confident, stupid, immense love, so much sadness mixed with happiness, and I guess well just uncertainty!
So here I go off to pack...and get myself ready for what will hopefully be a life changing trip and a mind clearing adventure!
I am excited to be able to deal with my brain with out the pressures of home, and be able to deal with the pressures of home when I get back and hopefully have a clear mind myself!
I am excited to learn to let go of this habit I have of over thinking everything and worrying about everyone accept myself!
I am excited to see my friends scattered all over Europe and hopefully meet some new ones!
This blog is going to turn into the everyday experiences of us on our journey, but don't worry that will still include lots of food!
So I guess see you across the ocean friends!

TOMORROW
Tomorrow we head out and over to spain! accross the ocean and to a totally different world. A world that I have never set foot in! Cultures that I have never experienced first hand! I decided to make myself a travel map Via www.travbuddy.com to see how much of the world I have already seen, and to help me keep track over the next couple months of where I will experience! I really thought that I wasnt doing to badly...but as of right now...I have only seen 2% of the world....I cant wait to keep adding to that percentage!
Good byes/see you laters are hard but they just make the reunions sweeter!

the calm before the nervous storm!
It is exactly 5 days before Sarah and I take off for Europe! Christmas has just passed and its time to start thinking about packing up most of my life and moving it over the ocean! I have hot and cold feet! one moment i am so excited I am already there in my head, the next moment I am looking out my window at the 10cm of snow Toronto just got and I think of how much I love home and how much I am I am going to miss this place! Miss my girlfriend, my family, my newest little niece, my wonderful friends and well even my job! But I guess sometimes in life you have to do what your most scared of...do what takes a lot of courage in order to be who your suppose to be! I think this journey is at a tipping point in my life and will give me way more positive feedback about myself then I could find staying here in Toronto! It will also give me a new appreciation for the place I call home....or maybe find me a new place to call home??
Get ready folks, the fun is about to begin!

on the eve of everything!
It is the eve of Xmas, New Years. Most importantly, Kristen and my adventure.
We are leaving Canada, and life as we know it. We are going across the world, to live, and see and have fun, hopefully.
So how do I feel on the eve of everything??? I am excited, I am scared. I am going to miss my cats, and my family. My Nephew Caeleb is going to change so much while I’m gone, or so my sister keeps telling me.
So why do this? Because the only thing you should regret, is the things you didn’t do. I plan to die regret free.....at the age of 110;)

GOAT CHEESE CAKE
This cheese cake has been a number one seller on my menu for over a year, its just the right amount of goat...and here it is...try it out and let me know what you think!
680g goat cheese
225g mascarpone
225g sugar
6 eggs
120 ml 10%cream
and from there you can add what ever flavor you want, black pepper, basil, lemon, your options are pretty open!
cream the goat cheese, mascarpone and sugar together in a mixer with a paddle attachment. Add the eggs one at a time until smooth, and add the cream to finish!
bake at 300 degrees for about 15 min!
I normally bake mine on a sheet tray and in a silpat mold!
tip for cheese cake, put some water on the sheet tray under your silpat mold....helps to stop cheese cakes from cracking!
this cheese cake is a wiked alternative!
